Olio nuovo 2015. Non chiamatelo condimento ma Alimento.


L’olio nuovo è arrivato! Al podere il Pozzo si celebra l'ultima raccolta dell'anno 2015 con la soddisfazione di aver colto a pieno la fertilità delle dolci colline di Rufina.

Le piante del nostro podere hanno beneficiato di una stagione molto regolare come abbiamo avuto modo di raccontare in occasione della vendemmia 2015 e dell’assenza di mosca dell’ulivo, la distruttiva “Dacus Oleae” che lo scorso anno aveva mietuto i poderi da nord a sud lungo la nostra penisola.


The new oil has arrived! At the Podere il Pozzo is celebrated the last harvest of the year 2015 with the satisfaction of having caught all the fertility of the rolling hills of Rufina.

The plants in our farm have benefited from a very regular season as we were able to tell during the harvest in 2015 and from the absence of the olive fly, the destructive "Dacus oleae" which last year had damned the farms from north to south along the Italian peninsula.


Anche noi, come numerose famiglie toscane, portiamo avanti una tradizione millenaria di impegno ed amore verso l’ulivo, la più nobile delle piante coltivate dall’uomo nel bacino del Mediterraneo.
La raccolta delle olive è sempre un momento di gioiosa scoperta: pettinare le fronde degli alberi per far piovere le preziose bacche è come "scoprire" un tesoro nascosto nel giardino. Solo con la raccolta a mano, albero dopo albero, si può assaporare la ricchezza dei doni preziosi dalla madre terra.

Mentre il profumo dell'olio inizia a riempire il frantoio, rimaniamo ipnotizzati dalla complessità dei composti aromatici sprigionati dalla lenta molitura a pietra: è da essi che scaturiscono quei fantastici sentori di erba fresca, di mela verde,  di carciofo e di mandorla che caratterizzano oli di qualità eccelsa. Il colore della spremitura è di un verde scuro e intenso, fino a sfiorare lo smeraldo, con riflessi luminosi come germogli primaverili.


We, like many Tuscan families, we carry on a long tradition of commitment and love of the olive tree, the noblest of plants cultivated by man in the Mediterranean basin.
The olive harvest is always a moment of joyful discovery: the combing of the trees from whom will rain the precious olives is like "discover" a hidden treasure in the garden. Only with hand-picking, tree after tree, you can savor the richness of precious gifts from Mother Earth
.

While the perfume of the oil begins to fill the mill, we remain mesmerized by the complexity of aromatic compounds released by the slow grinding of the stone: it is from this that come those wonderful aromas of fresh grass, green apple, artichoke and almond oils that characterize the excellent quality. The color of the squeeze is a dark green and intense, until it touches the emerald, with light reflections as spring buds.


Quest’anno l’olio del nostro podere ha notevoli caratteristiche organolettiche ed è di ottima qualità: per questo abbiamo deciso di non filtrarlo. In questo modo vogliamo aiutare  il prodotto a conservare tutte le sue proprietà nutritive più sane, il suo ricco bouquet di profumi e di freschezza inalterate per un periodo maggiore rispetto agli anni precedenti. 

Ci piace chiamare l’olio nuovo col suo vero nome. “Alimento” e non "condimento", che poco si addice al pregiato, salutare e gustosissimo succo d’oliva. Il nostro invito a gustarlo subito! Come vi sfizia di più...sul pane, sul riso bollito, per uova crude in una potente maionese, su foglie di cavolo nero scottate, insalate di ogni tipo, fagioli e ceci.


This year the oil of our farm has distinctive sensory characteristics and is of excellent quality: this is why we decided not to filter it. In this way we want to help the product to retain all its sane nutritional value and its rich bouquet of aromas and freshness intact for a longer period than in previous years.

We like to call the new oil by its real name. "Food", not only "seasoning", which remains poorly suited to the refined, healthy and delicious olive juice. Our invitation to enjoy it now! As you prefer ... on bread, on boiled rice, used for a powerful mayonnaise, on cabbage leaves scalded, on salads of all kinds, with beans and chickpeas.


Per la filiera a chilometro zero, le nostre bottiglie sono già da qualche settimana esposte nei supermercati COOP di tutta la provincia di Firenze e in importanti centri commerciali della toscana (come ad esempio il Parco Prato Coop).

For the chain to kilometer zero, our bottles are exposed for some weeks in supermarkets IPERCOOP throughout the province of Florence and in important commercial centers of Tuscany (such as the Parco Prato Coop).
