Il Bardiccio: una fetta di storia della Valdisieve!

Questo fine settimana si svolge a Rufina e Pontassieve un'interessante manifestazione che volta a valorizzare uno dei prodotti tipici del nostro territorio: il Bardiccio.

This weekend takes place in Rufina and Pontassieve an interesting event that would develop one of the typical products of our land: the Bardiccio.

Il bardiccio è un insaccato dall'aspetto di una lunga salsiccia la cui preparazione si basa sull'utilizzo delle parti meno pregiate e più ricche di sangue del suino.
Nato come piatto della tradizione povera toscana in una logica di riciclaggio alimentare tipica delle famiglie contadine o comunque meno abbienti, è realizzato tramite l'utilizzo tutte le parti meno nobili del maiale e del bue, comprese le interiora.
Per realizzarlo si utilizza tutt'oggi principalmente carne suina di seconda e terza scelta, quella generalmente non impiegata nella produzione di altri salumi come la finocchiona, la salsiccia o il salame: tenerume tritato, grasselli saporiti, cuore, polmone, fegato, milza ed altri tagli inutilizzati nelle altre lavorazioni perché di pezzatura troppo piccola. A questa viene aggiunta, in percentuale minore e con lo scopo di ingentilirne il gusto, anche carne bovina.
Le carni vengono macinate grossolanamente e successivamente vengono aggiunti sale, pepe, aromi e spezie tra cui, quella principale, è il finocchio selvatico.

The preparation of the bardiccio, that seems a long  sausage, is based on the use of less valuable parts of the pig and more full of blood.
Born as a dish of the Tuscan peasant tradition in a food-recycling logic typical of rural families or however poor, it is achieved by using all the less noble parts of the pig and of the ox, including entrails.
Also today, to achieve it, is primarily used the part of the pork of second or third choice, generally not used in the production of other meats as finocchiona, sausage or salami: chopped gristle, tasty fat, heart, lung, liver, spleen and other unused cuts in other operations because of too small pieces. To this is added, to a lesser extent and with the aim of refine the taste, also beef.
The meats are grinded coarsely and later is added salt, pepper, herbs and spices including, the main one, is the wild fennel.

La zona di produzione originaria del bardiccio, inserito tra i prodotti agroalimentari tradizionali italiani dalla Regione Toscana, è circoscritta ai comuni della Valdisieve, marginalmente del Valdarno, e in alcuni comuni del Mugello.
E proprio nella sua terra d'origine, la Valdisieve, si è deciso di dedicare l'intero anno alla sua divulgazione, attraverso manifestazioni locali e non solo, per far conoscere la sua storia e il suo inconfondibile sapore.
Forse non tutti sanno che...originariamente la ditta Cantine Bellini, ai primi del novecento, oltre al vino, produceva anche insaccati, tra cui, sicuramente, anche il bardiccio!!!

The original production area of the bardiccio, inserted between the traditional Italian food products from the Tuscany Region, is confined to the municipalities of Valdisieve, marginally of the Valdarno, and in some municipalities of the Mugello.
And just in his homeland, the Valdisieve, it was decided to devote the entire year to its disclosure through local events and more, to know its history and its unique flavor.
Perhaps not everyone knows that ... originally the firm Cantine Bellini, the early twentieth century, in addition to wine, also produced sausages, including, surely, even the bardiccio !!!

A marzo si è tenuto a Pontassieve il primo "Palio del Bardiccio", ovvero un concorso di cucina aperto a tutti coloro che desideravano cimentarsi nella "miglior interpretazione del bardiccio" nella realizzazione di piatti degni dei migliori chef.

In March he was held in Pontassieve the first  "Palio del Bardiccio", a cooking competition open to all who wished to engage in the "best interpretation of bardiccio" in the creation of dishes worthy of the best chefs.

La gara è stata molto combattuta, soprattutto tra i rappresentanti delle macellerie, anche perchè a far la differenza poteva essere la realizzazione stessa del bardiccio, del quale non esiste una ricetta codificata, poiché ogni piccolo produttore miscela i vari ingredienti sulla base di una propria tradizione!

The race was hard fought, especially between the representatives of the butchers, also because the difference may have been in the realization of the bardiccio, of which there is no codified recipe, since each small producer mixes the various ingredients on the basis of its own tradition!

Questo sabato si terrà il "gran finale",denominato "Notte Rossa", in onore del caratteristico colore del bardiccio. La giornata inizierà alle 10.00 presso la Macelleria Fabbrini di Pontassieve, vincitrice del "Palio del Bardiccio" e da qui tutti i partecipanti, accompagnati dal Corteo Storico di Pontassieve, faranno tappa nelle altre macellerie "sconfitte". Poi il corteo si sposterà verso la Villa di Poggio Reale, dove ad aspettarlo ci sarà il Corteo Storico della Rufina.
Nel piazzale della Villa sarà acceso un grande falò e verso le 12:30, all'interno dell'Enoteca e nel giardino ci sarà il pranzo con degustazione di piatti a base di Bardiccio e olio novo, accompagnati dal vino del Consorzio Chianti Rufina.

This Saturday will be held the "great final", called "Red Night", in honor to the color of the bardiccio. The day will begin at 10:00 at the Butcher Fabbrini of Pontassieve, winner of the "Palio del Bardiccio" and from there all the participants, accompanied by the Historical Parade of Pontefract, will go from the other butchers "defeats". Then the procession will move to the Villa di Poggio Reale, where waiting for him there will be the historical procession of Rufina.
In the square of the Villa it will be made on a bonfire and from 12:30, inside the Enoteca and in the garden, there will be lunch and the tasting of dishes of Bardiccio and the new olive oil, accompanied by the wine of the Chianti Rufina Consortium.

Il pomeriggio, alle 17:00, sempre in Villa, sarà presentato il libro "il bardiccio, non fatevi infinocchiare" di Alessandro Sarti: condurrà la serata il giornalista enogastronomico Paolo Pellegrini, che abbiamo avuto il piacere di conoscere alla serata al Teatro del Maggio Musicale in occasione dei festeggiamenti del Bando di Cosimo III.

In the afternoon, at 17:00, ever in the Villa, will be presented the book "the bardiccio, do not be a fool" by Alessandro Sarti: to lead the evening, the wine journalist Paolo Pellegrini, who we had the pleasure of meeting the event at the Teatro del Maggio Musicale during the celebrations of Cosimo's Bando.

Alle 18 in Enoteca prenderà il via la degustazione guidata Bardiccio-Chianti Rufina, con l'Associazione Amici del Chianti Rufina, al costo di 15 euro a persona e i festeggiamenti continueranno poi fino alla sera nei locali della Villa.

At 18:00, in the Enoteca, will start the guided tasting Bardiccio-Chianti Rufina, with the Friends of the Chianti Rufina, at a cost of 15 Euros per person and the party will continue then until the evening on the premises of Villa.

MAGNALONGA 2015. Una Passeggiata attraverso la Val di Sieve

Torna in vetrina su queste pagine la verdeggiante val di Sieve che abbiamo potuto ammirare lungo il percorso della Magnalonga 2015. Ripercorrendo il sentiero con le nostre foto, possiamo mostrare le bellezze del territorio dove viene coltivato e vinificato il Chianti Rufina.

Back featured on our pages the wonderful Val di Sieve that we could see along the route of Magnalonga 2015. Retracing the path with our pictures, we can show the beauty of the area where it is grown and vinified the Chianti Rufina.

Smentiamo chiunque pensi che questa manifestazione sia solo a carattere mangereccio. Non la paragonate a una sagra o una fiera di prodotti tipici. E' a tutti gli effetti un evento sportivo dove ci si cimenta in un trekking serio.

We prove to be wrong to anyone that think that this event is only a meal in the nature. You can't compared it to a festival or a fair of local products. It's in effect a sporting event where one is engaged in a serious trekking.

Il percorso breve è stato studiato per essere affrontato da chiunque, anche da chi non ha un allenamento sportivo. Questo non significa però che si trattasse di una semplice passeggiata nel bosco: chi ha fatto il percorso "breve" ha dovuto comunque percorrere ben 15 chilometri, affrontando alcune ripide salite e sentieri di montagna anche a tratti impervi a causa della presenza di fango.

The short course is designed to be approached by anyone, even by those who do not have a sports training. This does not mean that it was a simple walk in the woods: who made the path "short" had to walk 15 kilometers, facing some steep climbs and mountain trails also sometimes inaccessible due to the presence of mud.

Il percorso lungo, di 27 chilometri, è stato studiato minuziosamente per impegnare gli sportivi molto allenati che desideravano sfidare le proprie capacità atletiche.
Per tutti i partecipanti il tempo di percorrenza è stato calcolato in modo molto preciso, senza troppi margini per ulteriori soste ad di là dei ristori predisposti sul percorso.

The long path, 27 km, has been studied in detail to engage highly trained athletes who wished to challenge their ability.
For all participants the journey time has been calculated in a very precise way, without much room for further stops in add to the refreshments provided on the route.

Camminando di buona lena per cercare di non perdere il ritmo, dalla prima ripida salita, lasciato il paese di Vicchio, ci siamo inoltrati in un bosco misto di castagni, frassini, aceri, roverelle e pini. Nel bosco il sentiero si è fatto più dolce. E' stato un momento ideale per osservare la vitalità primaverile della natura e fare quattro chiacchiere senza l'affanno.        

Walking at a good pace to try to not lose the rhythm, the first steep climb, that left the village of Vicchio, sent us in a mixed forest of chestnut trees, ash trees, maples, oaks and pines. In the woods the trail became softer. It was an ideal time to observe the spring's vitality of nature and have a chat without breathlessness.

Proseguendo lungo il sentiero dei ragazzi di Barbiana, che ci ha condotto verso il primo ristoro, abbiamo costeggiato la bella chiesa di San Martino a Scopeto. Di questa pieve si ha menzione sin dal 1024.
L’imponente facciata, preceduta da una lunga scalinata, si fregia di tre stemmi in pietra appartenenti ad alcune delle famiglie che ne ebbero il patronato. Sul grande portale in pietra, una lunetta ad arco acuto contiene una ceramica policroma, datata 1926, realizzata dalla manifattura Chini di cui si registra una presenza significativa nel recupero di antiche opere architettoniche del Mugello.

Continuing along the path of "i ragazzi di Barbiana", which led us to the first refreshment, we walked near the beautiful church of San Martino a Scopeto. This church is mentioned since 1024.
The imposing façade, preceded by a long staircase, boasts three stone coats of arms belonging to some of the families that had the patronage. On the big stone portal, a lunette with pointed arches contains a polychrome ceramic, dated 1926, made by the Chini factory of which there is a significant presence in the recovery of ancient architecture of the Mugello.

La salita verso Barbiana è proseguita attraverso paesaggi emozionanti e scorci della campagna mugellana che sembravano essere stati dipinti.

The climb towards Barbiana has continued through exciting landscapes and views of the Mugello countryside that seemed to have been painted.

Alla prima sosta ci aspettavano fettunta e assaggi di ricotta e pecorino da consumarsi con vino bianco fresco.

At the first stop they waited fettunta and tasting of ricotta and pecorino cheese to be eaten with white fresh wine.

Rinfrancati nel corpo, siamo andati ad elevare anche lo spirito con una visita al cimitero e alla canonica di Barbiana dove Don Milani, nei primi anni '60, iniziò il primo tentativo di scuola a tempo pieno, espressamente rivolto alle classi popolari della zona.

Refreshed in body, we went to uplift the spirit with a visit to the cemetery and the rectory of Barbiana where Don Milani, in the early 60s, began the first attempt to school full time, specifically aimed at the popular classes in the area.

La sua scuola era alloggiata in un paio di stanze della canonica annessa alla piccola chiesa di Barbiana, un paese con un nucleo di poche case e molti casolari sparsi sulle pendici del Monte Giovi: con il bel tempo si faceva scuola all’aperto, sotto il pergolato. La scuola di Barbiana era un vero e proprio collettivo dove si lavorava tutti insieme e la regola principale era che chi sapeva di più aiutava e sosteneva chi sapeva di meno, 365 giorni all’anno.

His school was housed in a few rooms of the rectory attached to the small church of Barbiana, a country with a core of a few houses and many houses scattered on the slopes of Monte Giovi: with good weather, it was a school at the open, under the pergola. The Barbiana school was a real collective where everyone worked together and the main rule was that those who knew more helped and supported those who knew less, 365 days a year.

La nostra passeggiata verso questa isolata chiesetta montana è stato lo sforzo quotidiano di tanti giovani che, per elevare la loro condizione di contadini, si sono impegnati anima e corpo, percorrendo anche molti chilometri, pur di avere l'opportunità di imparare i fondamenti della costituzione italiana.

Our walk to this isolated mountain church was the daily effort of many young people that, to uplift their condition of farmers, have committed body and soul, walking for many kilometers, just to have the opportunity to learn the fundamentals of the constitution Italian.

A questo punto del percorso i partecipanti si sono trovati al bivio in cui hanno potuto scegliere se intraprendere il percorso lungo, salendo fino in vetta al monte Giovi, dove era stato posizionato il secondo punto ristoro, o completare il percorso breve. Quest'ultimo riprendeva immediatamente in discesa per rientrare a San Martino a Scopeto lungo una via molto panoramica, diversa da quella percorsa all'andata.

At this point of the route the participants found themselves at the crossroads where they could choose whether to take the long route, climbing to the summit of Monte Giovi, where he had been placed second eatery, or complete the short path. The latter resumed immediately downhill to return to San Martino a Scopeto along a very scenic, other than the one just covered.

Il cammino viene sostenuto dal terzo punto di ristoro con pane, salumi e vino rosso.

The path is supported by the third point of refreshment with bread, salami and red wine.

Durante il rientro si sono potute ammirare zone rurali coltivate alternate a tratti boschivi e prati.
Sono sfilate davanti ai nostri occhi tutte le piccole meraviglie della natura nella fragilità della fioritura primaverile..."L'Eternità è innamorata delle opere del tempo"...come insegna William Blake.

On the way back we were able to admire the rural areas cultivated alternating with stretches forest and meadows.
Are paraded before our eyes all the little wonders of nature in the fragility of the spring bloom ... "Eternity is in love with the works of the time" ... as taught by William Blake.

Stanchi e affamati abbiamo raggiunto l'arrivo di questa manifestazione per il goloso pranzo: pasta alla puttanesca, porchetta e cipolle in agrodolce, il tutto accompagnato dalle bottiglie di vino fornite dal consorzio chianti Rufina, comprese ovviamente anche quelle delle Cantine Bellini!

Tired and hungry we reached the finish of this event for the delicious lunch: pasta alla puttanesca, porchetta and sweet onions, accompanied by bottles of wine provided by the Consorzio Chianti Rufina, including, of course, those of Cantine Bellini!

Ci auguriamo che anche il prossimo anno si rinnovi questo tradizionale appuntamento... che fa bene alle gambe, allo stomaco, alla testa e al cuore! Notevole infatti la somma di più 4000 euro che è stata raccolta l'anno scorso per finanziare varie attività di beneficenza, e che sicuramente è stata raggiunta anche quest'anno visto l'altissimo numero di partecipanti!

We hope that next year will be renewed this traditional event ... which is good for legs, stomach, head and the heart! Remarkable is the sum of more than € 4000 that was collected last year to fund various charitable activities, and that certainly has been reached also this year, thanks to the high number of participants!
