SFIZIOSE RICETTE. Cenci di Carnevale

Cenci carnevale vin santo Cantine Bellini

Per festeggiare gli ultimi giorni di Carnevale, vogliamo pubblicare la ricetta di un dolce tipico della tradizione toscana: i Cenci. E' comunque probabile che la stessa ricetta si possa trovare, con altre forme e altri nomi, anche in molte altre regioni. Noi vi consigliamo di provare la nostra versione "raviolata" di questi golosissimi ritagli di pasta fritta

Ingredienti:
350 gr di farina 00
2 Uova
50 gr di burro
50 gr di zucchero
scorza di limone o di arancia
1 bustina di vaniglina
1 bustina di lievito per dolci
1 bicchierino di vin santo Cantine F.lli Bellini
marmellata di more e/o marmellata di arancia
1/2 bicchiere di latte
abbondante olio di semi per la frittura
zucchero a velo

Per cominciare, fondere il burro in un pentolino a fiamma bassa. Successivamente, lontano dal fornello, unire lo zucchero in modo che si possa sciogliere con il calore del burro. Sbattete in un ampio recipiente le uova e unite il burro zuccherato. Per amalgamare bene il composto, aggiungere anche il vin santo, la scorza di agrumi, la vaniglina e il lievito. Infine, aggiungete la farina al liquido per creare la pasta.
E' importante lavorare bene la pasta in modo che acquisti elasticità e non risulti appicciosa. Lasciate riposare la pasta per circa mezz'ora in frigorifero, avvolgendola in un panno.

Stendete la pasta e ottenete una sfoglia molto fine (1-2 mm). Tagliate con un coltello o con la rotella dentellata dei rettangoli con lato di 6 cm x 12 cm (grande più o meno quanto il palmo di una mano).
Ponete al centro del rettangolo un cucchiaino della vostra marmellata preferita (quelle che si sposano meglio sono quella di more o quella di arancia). Per chiudere bene il raviolo di pasta bagnate di latte tutti i lati del rettangolo con un dito, piegate a metà il rettangolo schiacciando e stringendo bene sui bordi (dando la forma a "borsettina"). Assicuratevi che il cencio sia ben chiuso per evitare che esca la marmellata durante la frittura.

In una padella a pareti alte, versate abbondante olio di semi. Scaldate l'olio e immergete delicatamente i cenci per friggerli. Non esagerate con la cottura, basteranno pochi secondi per lato e potranno essere trasferiti sulla carta assorbente dove scoleranno l'olio in eccesso.
Appena i cenci si asciugeranno un pò, spolverateli di zucchero a velo.

Sia caldi che freddi questi dolcetti si sciolgono il bocca e grazie alla marmellata all'interno non risuteranno troppo secchi. Si accompagnano benissimo con un bicchiere di vin santo Cantine Fratelli Bellini.


To celebrate the last days of Carnival, we publish the recipe for a typical dessert of the Tuscan tradition: the “Cenci”.
Probably you can found the same recipe, with other forms and names, in many other Italian regions.
We recommend you to try our version of " cenci-ravioli" of these fried doughs.

Ingredients:
350 gr of Flour 00
2 eggs
50 gr of butter
50 gr of sugar
Zest of one lemon or one orange
One little sachet of vanilla
One packet of baking powder for cakes
One little glass of Vin Santo del Chianti Cantine F.lli Bellini
Blackberry or orange jam
½ glass of milk
Seed oil for frying
Icing sugar

To start, melt the butter in a saucepan over low heat. Later, away from heat, add the sugar so that it can dissolve in the heat of the butter. Beat eggs in a large bowl and add the sweetened butter. To stir the mixture well, add the Vin Santo, the zest of lemon (or of orange), the vanilla and the baking powder. Finally, add the flour to the liquid to create the dough.

It’s important to work the dough so that it become elastic and not sticky. Let the dough rest for half an hour in the refrigerator, cover with a cloth. Roll out the dough to make it  very thin (1-2 mm). Cut with a serrated knife or with the wheel some rectangles (about of 6 cm x 12 cm), to the size of one palm. Put in the center of the rectangle a teaspoon of jam (the blackberry jam or of oranges is the most recommended). To close the ravioli, first you have to wet, with a finger, all sides of the rectangle with milk, then you must fold in half the rectangle, pressing and tightening the edges (giving the form of a little bag). Make sure that the “cencio raviolo” is firmly closed, to prevent the jam comes out during frying.

In a skillet over high walls, pour some of seeds oil. Heat oil and gently dip the “cenci ravioli” to fry them. Do not overdo the cooking, a few seconds on each side are sufficient and you can transfer them on the paper towel where to drain excess oil. As soon as the “cenci ravioli” are a bit dry, sprinkle with icing sugar.

Hot and cold these sweets melt the mouth. Thanks to jam, the “cenci ravioli” are not too dry. It goes well with a glass of vin santo Cantine Fratelli Bellini.

Podere il Pozzo conquista Toscana Gourmet

Si apre nel migliore dei modi il 2011 che vede una generale ripresa del mercato del vino toscano.

Proprio in questi giorni infatti c'e' particolare fermento per le presentazioni delle anteprime della Vernaccia (al museo di arte moderna di San Gimignano), del Chianti Classico (alla stazione Leopolda di Firenze) e del Brunello (presso la fortezza di Montalcino), tanto che La Repubblica ha dedicato a questi eventi una ricca pagina nella rubrica "Toscana Gourmet" del 12/02/2011.

Nella stessa pagina, per la sezione "La Bottiglia", abbiamo il piacere di essere stati scelti come punto di riferimento per ricordare che il Chianti Rufina, a tutti gli effetti, può essere considerato ormai al pari dei grandi vini della nostra gloriosa tradizione regionale.

Il Pozzo riserva 2007 spicca per le sue proprietà organolettiche, per il suo caratteristico gusto ma sopratutto per il suo ottimo rapporto qualità/prezzo ed ha ottenuto un punteggio di 83/100 sulla scheda Onav de "La Repubblica".
