Guida Vini Vitae A.I.S. 2017
Sabato 29 ottobre a Milano, presso The Mall in piazza Lina Bo Bardi, è stata presentata la Guida Vini Vitae 2017, la guida dell’Associazione Italiana Sommelier.
Sono aumentati, rispetto all’edizione dello scorso anno, i simboli che contraddistinguono la guida AIS, con l’inserimento della Freccia di Cupido e del Salvadanaio. Il primo rappresenta l’impatto emozionale che alcuni vini hanno saputo trasmettere sin dal primo sorso, mentre il secondo è stato assegnato a quei prodotti in grado di esprimere un particolare valore relativamente al prezzo e alla tipologia.
Vitae 2017 dà voce a una produzione che si scopre sempre più green. Nello spirito della propria filosofia, l’AIS dedica molta attenzione all’etica dei processi produttivi, dalla vigna alla cantina, valutando con cura particolare i vini che meglio hanno saputo esprimersi, nel rispetto della salvaguardia ambientale.
Per le Cantine Bellini sono stati selezionati il Chianti Rufina Riserva D.O.C.G. 2013, che ha ricevuto ben tre viti (i punteggi seguono una scala da uno a quattro), il Chianti D.O.C.G. annata 2015, il 100% Sangiovese I.G.T. annata 2015, il Dominante I.G.T. 2013, il Mambo rosso I.G.T. annata 2015 e il Mambo bianco I.G.T. annata 2015.
Saturday, October 29, in Milan, at The Mall in Piazza Lina Bo Bardi, was presented the Guida Vini Vitae 2017, the Italian Sommelier Association's guide.
The symbols that distinguish the AIS guide are increased compared to last year, , with the inclusion of the Cupid's Arrow and of the Piggy Bank. The first is the emotional impact that some wines have been able to pass from the first sip, while the second was awarded to those products able to express a particular value relative to the price and the type.
Vitae 2017 gives voice to a production that discovers itself more and more green. In the spirit of its philosophy, AIS pays much attention to the ethics of the production process, from the vineyard to the cellar, considering very carefully the wines that have best been able to express themselves, in accordance with environmental protection.
For the Cantine Bellini were selected the Chianti Rufina Reserve D.O.C.G. 2013, which has received three screws (the scores follow a scale from one to four), the Chianti D.O.C.G. vintage 2015, the 100% Sangiovese I.G.T. vintage 2015, the Dominante I.G.T. In 2013, the red Mambo I.G.T. vintage 2015 and white Mambo I.G.T. vintage 2015.

SFIZIOSE RICETTE: i Dolmades!
Oggi vogliamo preparare una ricetta che contiene tutti i profumi ed i sapori delle terre di Rufina. Una pietanza leggera, energetica e gustosissima che racchiude tutti gli elementi della cucina tradizionale toscana, ma che in realtà appartiene a quella greca: i DOLMADES!
Passeggiando nei boschi e nelle campagne intorno a Firenze è possibile trovare facilmente sia le erbe aromatiche citate negli ingredienti, sia le foglie indispensabili di Sangiovese.
Today we want to prepare a recipe that contains all the aromas and flavors of the land of Rufina. A light dish, tasty and with the energy that contains all elements of the traditional Tuscan cuisine, but that belongs to the Greek: the DOLMADES!
Walking in the woods and country around Florence you can easily find both the herbs mentioned in the ingredients, and the indispensable leaves of Sangiovese.
I DOLMADES sono un piatto ideale per pic nic, pranzi al sacco o buffet all'aperto, magari accompagnati da un bel calice di Chianti Rufina!
The DOLMADES are an ideal dish for a picnics, packed lunches or outdoor buffet, perhaps accompanied by a nice glass of Chianti Rufina!
INGREDIENTI (per 6 persone): INGREDIENTS (for six persons):
500 gr di riso 500 gr of rice
15 foglie di vite Sangiovese 15 leaves of Sangiovese
1 cipolla 1 onion
50 gr di pecorino grattugiato 50 gr of grated pecorino
1 limone 1 lemon
1 dado 1 stock cube
1/2 bicchiere di vino bianco toscano 1/2 glass of white tuscan wine
2 cucchiaini di prezzemolo 2 teaspoons of parsley
2 cucchiaini di aneto 2 teaspoons of dill
1 cucchiaino di mentuccia 1 teaspoon of peppermint
1 cucchiaino di nipitella 1 teaspoon of calamint
1 cucchiaino di origano 1 teaspoon of oregano
sale, pepe, paprika salt, pepper, paprika
PREPARAZIONE:
Lavare le foglie di vite, scottarle per qualche minuto in acqua bollente stando attenti a non romperle, quindi scolarle e adagiarle su un tagliere di legno inclinato ben stese, in modo da far sgocciolare tutta l'acqua.
Soffriggere la cipolla tagliata finemente in un filo d'olio, unire il riso e sfumare con mezzo bicchiere di vino bianco. Procedere nella cottura del riso aggiungendo via via il brodo (preparato a parte col dado), salare e pepare. A metà cottura aggiungere tutte le erbe aromatiche (prezzemolo, aneto, mentuccia, nipitella e origano) e il pecorino grattugiato. Quando il riso è quasi cotto spegnere il fuoco, aggiungere la paprika, mescolare bene e lasciar freddare (assicurandosi che il riso sia ben asciutto).
Quando il riso è un raffreddato, porre uno o due cucchiai di riso in ogni foglia, quindi arrotolarla e chiuderla creando una sorta di involtino.
PREPARATION:
Wash the vine leaves, scald in boiling water for a few minutes, being careful not to break them, then drain and place them, well spread out, on a slanted wooden cutting board, so as to drip all the water.
Fry lightly the finely chopped onion in a little olive oil, add the rice and sprinkle with half a glass of white wine. Proceed to cook the rice, gradually adding the broth (prepared with the stock cube), add salt and pepper. Halfway through cooking, add all the herbs (parsley, dill, peppermint, catmint and oregano) and the grated pecorino. When the rice is almost ready, turn off the fire, add the paprika, mix well and let cool (make sure that the rice is dry).
When the rice is cool, put one or two tablespoons of rice in each leaf, then roll it up and close it, creating a sort of roulade.
Mettere tutti gli involtini in una pirofila, bagnandoli con un bicchiere d'acqua e col succo di un limone, così che risultino mezzi coperti dal liquido, quindi infornare per circa mezz'ora a 220°C.
Scolare gli involtini e servirli: sono ottimi sia caldi che freddi!
Place all the rolls in a baking dish, wetting them with a glass of water with the juice of a lemon, so that they are half covered by the liquid, then bake for half an hour at 220 ° C.
Drain the rolls and serve them: they are excellent both hot and cold!

SFIZIOSE RICETTE. Sangria!

L'estate porta sulle nostre tavole i colori e l'atmosfera leggiadra della festa.
Per accompagnare i piatti saporiti della stagione o anche solo per sorseggiare mentre si frescheggia in compagnia, non c'e' di meglio della Sangria!
E' certamente più economico farla in casa, decidendo volta volta le quantità di vino e la frutta da utilizzare, che comprare i mega cartoni di mix già pronto al supermercato.
Anche questa, come tante ricette molto popolari, è di facile realizzazione e non pensate che serva necessariamente un vino spagnolo.
Vi consigliamo di usare un Bianco e un Rosso toscano; dei vini abbastanza secchi e con un sapore non troppo deciso, visto che dovranno aromatizzarsi con il sapore della frutta.
Gli ingredienti sono:
* 1 litro di vino Rosso toscano Cantine F.lli Bellini
* 1 litro di vino Bianco toscano Cantine F.lli Bellini
* 1 litro di succo d'arancia
* 500 grammi di zucchero
* Pesche e mele a piacere
Unite tutti gli ingredienti in una caraffa o in una ciotola molto capiente. Lasciate a insaporire il vino almeno mezza giornata.
Servitela ben fresca, aggiungete anche dei cubetti di ghiaccio nella caraffa in modo che la Sangria non si riscaldi.

It’s certainly more economical to prepare it at home, gradually deciding the amount of wine in proportion to fruit, rather than buying a cardboard of ready-mix wine at the supermarket.
Like many popular recipes, also the Sangria is easy to do and isn't necessary to use a Spanish wine.
We recommend using a white and a red Tuscan, dry wines with a flavor that is not too determined, because they have to flavored with fruit aroma.
The ingredients are:
* 1 litre of Red Tuscan Cantine F.lli Bellini
* 1 litre di White Tuscan Cantine F.lli Bellini
* 1 litre of orange juice
* 500 gr of sugar
* peaches and apples
Mix all the ingredients in a big jug, with fruits cut into large slices. Leave wine flavor at least half day.
Serve well-chilled, add also some ice cubes in the jug, so that the Sangria is cool.

SFIZIOSE RICETTE. La pasta al Vino

L'arrivo della bella stagione ci ha dato lo spunto per parlare di una ricetta che unisce con risultati stupefacenti i più comuni elementi della cucina.
Stiamo parlando della morbida e profumatissima "Pasta al Vino".
Cercando su internet si trovano facilmente diverse ricette ma questa economica e dietetica alternativa alla comune pasta sfoglia non sembra essere così conosciuta.
Gli ingredienti sono:
*300 gr di farina
*120 ml di vino Toscana Bianco Cantine F.lli Bellini
*80 ml di olio di mais o di olio di semi
*1 cucchiaino di sale fino
Come potete notare, a differenza della comune pasta sfoglia o brisée, non c'e' alcuna traccia di burro.
La preparazione è semplice e veloce. Come per preparare una qualsiasi pasta si uniscono gli ingredienti in una grande ciotola e, lavorandoli per pochi secondi, si ottiene una pasta molto elastica che è già pronta da usare: non necessita, infatti, neanche di nessuna lievitazione.
Se il composto vi sembra troppo farinoso aggiungete qualche goccia di vino in più. Lo stesso fate con la farina se il composto vi sembra troppo molle.
Se avete già utilizzato in precedenza la pasta sfoglia surgelata del supermercato, vi stupirete della maggior facilità con cui si stende la Pasta al Vino.
Per concludere basta adagiare la pasta stesa su una tortiera, ricordasi di sforacchiare il fondo con la punta di una forchetta e introdurre condimenti a piacere come nella preparzione di una qualsiasi quiche.
Le quiche più adatte sono comunque quelle alle verdure.
Dopo pochi minuti di cottura la vostra cucina sarà inebriata da un invitante profumo e non vedrete l'ora di assaggiare la vostra torta.
In media è necessaria circa mezz'ora a 200°, anche se dipende dal tipo di quiche scelta.
Se volete provare la versione con il vino rosso, la quiche di cipolle dovrebbe essere la migliore ricetta che vi si sposa.

We're talking about the soft and fragrant "Wine Pastry".
It’s easy to find a lot of different recipes on web, but this pastry, not expensive and dietary, that is an affordable alternative to the common puff pastry, does not seem to be well known.
The ingredients are:
* 300 gr plain flour
*120 ml of Toscana Bianco Cantine F.lli Bellini
*80 ml seed oil
*1 tablespoon salt
As you can see, unlike the common pastry, or brisée, there isn’t any hint of butter.
The preparation is simple and fast. Sieve the dry ingredients into a large bowl, then add the wine and the oil and work slowly for few seconds, until the pastry is homogeneous. The pastry is very elastic and immediatly ready to use: it doesn’t need any leavening.
If the pastry is too dry, add some wine. If the pastry is too wet and soft, add some flour.
If you are accustomed to using the puff pastry, you’ll be surprised of how the wine pastry is easier to rolling out.
Roll out the pastry in a baking tin and prick with a fork. Then, put on the ingredients of your quiche.
The most suitable quiches are with vegetables.
While the quiche bakes in the oven, your kitchen will be inebriated by an inviting scent and you will be anxious to taste your quiche.
Baked in oven for 20-30 minutes (it depend to the ingredients of the quiche) at 200°C.
