SFIZIOSE RICETTE: Filetti con riduzione al Chianti Rufina e nocciole tostate


Il filetto con riduzione al Chianti Rufina e nocciole tostate è un secondo che unisce tutta la tenerezza e il sapore di un taglio di carne pregiato come il filetto con una deliziosa salsa preparata con ottimo vino rosso, arricchito da profumatissimi aromi. Di semplice preparazione ma da un elegante impatto scenico, questa ricetta è l’ideale per un’occasione speciale.

The fillet with reduction of Chianti Rufina wine and toasted hazelnuts is a second that combines all the tenderness and flavor of a cut of fine meat such as fillet with a delicious sauce prepared with excellent red wine, enriched with fragrant aromas. A simple preparation with an elegant scenic impact, this recipe is ideal for a special occasion.

Ingredienti:                                                        Ingredients:
3 filetti di manzo di 8-10 cm di spessore          3 beef fillets  8-10 cm thick
5 dl di Chianti Rufina Podere il Pozzo             5 dl of Chianti Rufina Podere il Pozzo
60 gr di nocciole tostate                                   60 gr of toasted hazelnuts
zucchero                                                          sugar
sale e pepe                                                       salt and pepper

Per prima cosa preparare la riduzione al Chianti Rufina. Mettere il vino in una casseruola con un pizzico di sale e uno di zucchero, quindi cuocere a fiamma bassa per almeno 30 minuti finchè il liquido non si sarà ridotto di almeno la metà e avrà una consistenza sciropposa.
In una padella tostare le nocciole, quindi tritarle grossolanamente.

First prepare the reduction to Chianti Rufina. Put the wine in a saucepan with a pinch of salt and one of sugar, then cook over low heat for at least 30 minutes until the liquid has reduced by at least half and has a syrupy consistency.
Toast the hazelnuts in a pan, then chop them coarsely.


Cuocere i filetti per 3-4 minuti per lato sulla piastra precedentemente scaldata.

Cook the fillets for 3-4 minutes per side on the previously heated plate.


Avvolgere la carne con fogli di alluminio e lasciar riposare due tre minuti. Eliminare l'alluminio e spolverizzare le carni con sale e pepe su entrambi i lati.

Wrap the meat with aluminum foil and allow it to rest for two minutes. Remove the aluminum and sprinkle the meat with salt and pepper on both sides.


Disporre i filetti su un vassoio, cospargerli con la granella di nocciole e versare la riduzione di Chianti Rufina. Buon Appetito!

SFIZIOSE RICETTE. Arista alle castagne

Quando della stagione estiva non rimane che il ricordo, ecco che l’autunno ci avvolge di colori, di profumi e sapori che stuzzicano i sensi.

Uno spettacolo certo diverso da quello che offrono le spiagge bianche e assolate, ma non per questo meno affascinante. La tranquillità e la maestosità della natura del bosco ci invita a lunghe passeggiate per ammirarne la bellezza, magari ingannando il tempo con la raccolta e la degustazione dei frutti di cui l'autunno è prodigo.

La castagna è senza dubbio uno dei frutti più tipici di questo periodo. Ecco quindi una ricetta di un secondo bello sostanzioso che si abbina perfettamente a una bottiglia di Chianti rufina “Podere Il Pozzo”: l'arista alle castagne.

Gli ingredienti sono:

800 gr di Arista di maiale
1/2 l di latte
800 gr di castagne (pesate con la buccia)
Vino Bianco Toscano Cantine Bellini
Sale,
Pepe,
Salvia, timo, rosmarino, alloro

Per prima cosa, si prepara la carne.
Mettete l'arista in una pentola capiente, irrorate con 1 bicchiere di vino bianco e rosolate a fuoco medio su tutti i lati. A parte, preparate un trito con salvia, timo, rosmarino e alloro. Quando la carne sarà colorita, salate, pepate e cospargete con il trito di erbe su tutte le parti, infine ricoprite il vitello con il latte. Coprite con un coperchio e cuocete per 1 ora e 30 minuti a fuoco lentissimo, ricordandovi di girare la carne ogni tanto affinchè non si attacchi sul fondo.

In una pentola a parte, lessate le castagne. Quando la cottura è ultimata (cioè quando le castagne sono morbide ma non troppo molle), spegnete il fuoco, scolate e sbucciate le castagne.

Unite le castagne sbriciolate grossolanamente al latte di cottura dell’arista, quando manca circa mezz’ora al termine di cottura della carne e continuate a girare ogni tanto con un mestolo di legno affinché la purea non si attacchi sul fondo.

Scolate l'arrosto, tagliate a fette e servite insieme alla crema di latte e castagne.

The tranquility and majesty of the nature of the forest invite to make  long walks, to admire her beauty, passing the time by collecting and tasting the fruits that in the autumn are numerous.


The chestnut is without doubt one of the most typical fruits of this period. So here's a nice recipe for a nourishing second that combines perfectly with a bottle of Chianti Rufina "Podere Il Pozzo": pork with chestnuts.

The ingredients are:

800 gr of pork loin
1/2 l of milk
800 gr of chestnuts (weighed with the skin)
Vino Bianco Toscano Cantine Bellini
Salt,
Pepper,
Sage, thyme, rosemary, laurel

First, you prepare the meat.
Put the pork loin in a big pot, sprinkle with a glass of Vino Bianco Toscano Cantine Bellini and brown on all sides over medium heat. Separately, prepare a mixture with sage, thyme, rosemary and bay leaves. When the meat is lightly brown, add salt, pepper and sprinkle with the mixed herbs on all parties, finally coat the pork loin with the milk. Cover with a lid and cook for 1 hour and 30 minutes over low heat: remember to turn the meat occasionally so it doesn’t stick to the bottom.

In a separate pot, boil the chestnuts. When cooking is completed (when the chestnuts are soft but not too much) turn off the heat, drain and peel the chestnuts.

When there about half an hour at the end of cooking meat, add the crumbled chestnuts to the milk used to cook the pork loin and continue turning the cream of milk and chestnuts with a wooden spoon so it doesn’t stick to the bottom.

Drain the meat, cut into slices and serve with the cream of milk and chestnuts.
