Buy Wine 2015 & Chianti lovers, l'Anteprima del Chianti


Sta per iniziare un Febbraio ricco di eventi e manifestazioni. Dopo il successo dell’evento 2014, anche quest’anno Buy Wine, giunto ormai alla sua V edizione, sarà organizzato alla Fortezza da Basso e, in contemporanea, inizieranno una serie di appuntamenti organizzati per presentare le diverse “Anteprime di Toscana”, a cominciare dall'Anteprima del Chianti presso la Ex Manifattura Tabacchi, in via delle Cascine.

It's coming a February full of events . After the success of the event in 2014, this year Buy Wine, now in its fifth edition, will be held at the Fortezza da Basso and, simultaneously, will start a series of events organized to present the different "Previews of Tuscany", starting with the Chianti Preview at the Ex Manifattura Tabacchi, in via delle Cascine.


Il 13 e 14 febbraio nel Padiglione Spadolini della Fortezza da Basso, dalle 9:00 alle 16:00, 280 produttori toscani incontreranno 300 buyers stranieri provenienti sia da mercati consolidati come gli Stati Uniti, il Canada o il Regno Unito, ma anche da paesi emergenti come Brasile, Cina, Est Europa, Turchia o Australia. Tra le novità di questa edizione, l’area “Green” dedicata ai produttori di vino biologico.

On 13 and 14 February in the Padiglione Spadolini, from 9:00 to 16:00, 280 Tuscan producers will meet 300 foreign buyers both from established markets like the United States, Canada or the United Kingdom, but also from emerging countries such as Brazil, China, Eastern Europe, Turkey and Australia. Among the novelties of this edition, the "Green" area dedicated to organic wine producers.


Il 14 febbraio, in contemporanea all’ultima giornata di Buy Wine, all’Ex Manifattura Tabacchi, aperta in esclusiva per l’occasione, si terrà “Chianti Lovers”, l’Anteprima del Chianti, la prima di una serie di eventi che, fino al 21 febbraio, saranno volti a presentare agli operatori e ai giornalisti di settore i vini nuovi introdotti sul mercato dal 2015, in altre sedi espositive fiorentine e non.

Mentre Buy Wine è un evento dedicato esclusivamente agli operatori del settore, Chianti Lovers sarà rivolto nella prima parte della giornata alla stampa mentre, novità di quest’anno, nel pomeriggio anche gli operatori di settore e al pubblico che, pagando il biglietto d’ingresso (acquistabile anche su box office), dalle ore 16, potranno accedere all’area tasting collettiva, dove, muniti di apposito bicchiere e sacchetto porta bicchiere, assaggeranno i vini proposti dai produttori.

Dalle ore 19 alle ore 22 si svolgerà quindi “Chianti Party”: si aggiungeranno alla mescita un buffet aperitivo per tutti i partecipanti ed espositori e accompagnamento musicale DJ Set.

Le Cantine Bellini e il Podere il Pozzo saranno presenti sia alla Fortezza da Basso per Buy Wine che all’Ex Manifattura Tabacchi per Chianti Lovers, con due stand personalizzati.

Conclusi gli incontri fiorentini, in contemporanea con le altre Anteprime di Toscana, saranno organizzate anche escursioni mirate e tour guidati alla scoperta della realtà delle singole aziende partecipanti, che apriranno le porte ai visitatori.

Il 17 febbraio sarà la giornata dedicata al Chianti Rufina: la mattina i visitatori saranno accolti nella storica Villa di Poggio Reale da tutti i produttori che allestiranno per l’occasione appositi stand. Quindi, dopo un buffet aperto ai partecipanti, saranno organizzate visite guidate alle diverse aziende: presso il Podere il Pozzo saremo lieti di mostrare le nostre vigne e la nostra Cantina.
La giornata si concluderà quindi con una cena comunitaria presso la Fattoria di Lavacchio.


The February 17 will be the day dedicated to the Chianti Rufina: in the morning the visitors will be greeted in the historic Villa Poggio Reale by all producers that will set up special stands for the occasion. After a buffet organized to the participants, will start the guided tours to the different wineries: at the Podere il Pozzo we will be happy to show our vineyards and our winery.
The day will conclude with a dinner at the restaurant of the Fattoria di Lavacchio.

SFIZIOSE RICETTE: Cinghiale in umido


Continua la nostra proposta di carni al sugo tipiche della tradizione toscana con la ricetta del Cinghiale in umido. Una preparazione molto lunga da realizzare, ma che in realtà non presenta particolari difficoltà di esecuzione: una ricchezza di ingredienti che contribuiscono a rendere il vino protagonista insieme alla carne!

Continue our proposal of meat with sauce, typical of the Tuscan tradition with the recipe of the stew of Boar. A preparation very long to do, but not particularly difficult : a wealth of ingredients that help to make the wine protagonist with the meat!

1 costa di sedano                                                   1 celery
100 gr di salsa di pomodoro concentrato            100 gr of concentrated tomato sauce
750 ml di passata di pomodoro                            750 ml of tomato sauce
100 gr di olive nere                                                 100 gr of black olives
aromi e spezie: ginepro, chiodi di garofano,        seasoning: juniper, cloves,
salvia, timo, rosmarino, alloro                                sage, thyme, rosemary, bay leaves

PREPARAZIONE:
Tagliare a pezzi la carne e lavarla in un recipiente con vari passaggi con acqua, fintanto questa non risulti pulita. Far marinare lo spezzatino di cinghiale per almeno 12 ore completamente coperto dal vino (utilizzare un vino leggero, come il Rosso Toscano I.G.T. Cantine Bellini, in quanto il liquido dopo viene eliminato) in infusione con tutti gli aromi e le spezie e grani di pepe.

Scolare la carne, buttare via il vino e fare un battuto con tutti gli aromi.

In una casseruola preparare un soffritto con la cipolla, il sedano e la carota finemente tritati, quindi unire la carne e far rosolare a fuoco vivace. Se la carne rilascia del liquido, eliminarlo con un cucchiaio.

Aggiungere il vino (in questo caso serve invece un vino corposo come il Chianti Rufina Riserva D.O.C.G. Cantine Bellini), la passata di pomodoro, il concentrato in tubetto, un bicchiere d’acqua, il trito di aromi precedentemente preparato, sale e pepe.

Abbassare la fiamma e lasciar cuocere per 3-4 ore, avendo cura di girare ogni mezz’ora.
A cottura quasi ultimata aggiungere le olive e servire ben caldo.


PREPARATION:
Cut the meat into pieces and wash it in a container with various passages with water, as long as this it is clean. Marinate the boar stew for at least 12 hours, fully covered by the wine (use a light wine, such as Rosso Toscano IGT Cantine Bellini, since liquid is removed after) infuse with all the seasoning and the  peppercorns.

Drain the meat, throw away the wine and chop all the aromas.

In a saucepan, sauté the onion, celery and carrot finely chopped, then add the meat and brown it over high heat. If the meat releases the liquid, remove it with a spoon.

Add the wine (in this case serves a full-bodied wine such as Chianti Rufina Riserva D.O.C.G. Cantine Bellini), the tomato sauce, the concentrated tomato sauce, a glass of water, the chopped herbs, salt and pepper.

Lower the heat and simmer for 3-4 hours, taking care to turn every half hour.

When almost cooked, add the olives and serve hot.

SFIZIOSE RICETTE - Stracotto al Chianti Rufina


Lo Stracotto al Chianti è una delle ricette classiche della tradizione toscana: vi proponiamo la  nostra versione...è veramente un gran piatto, provare per credere!

1 kg di carne di manzo                                      1 kg of beef
(preferibilmente razza Chianina)                       (preferably Chianina)
2-3 bottiglie di Chianti Rufina D.O.C.G.             2-3 bottles of Chianti Rufina D.O.C.G.

1 cipolla                                                              1 onion
2 carote                                                              2 carrots
1 costa di sedano                                               1 celery
2 zucchine                                                          2 zucchini
100 gr di pinoli                                                    100 gr of pine nuts
100 gr di mandorle                                             100 gr of almonds
100 gr di uva sultanina                                       100 gr of raisin
olio extravergine di oliva                                      extra virgin oil
sale e pepe                                                         salt and pepper

PREPARAZIONE:
In una casseruola preparare un soffritto con la cipolla, il sedano, le carote e le zucchine finemente tritati.

In a saucepan, sauté the onion, celery, the carrots and zucchini, finely chopped.











Quando le verdure si saranno ammorbidite, unite la carne, condita con sale e pepe e legata con filo da cucina.

When the vegetables have softened, add the meat, seasoned with salt and pepper and tied with kitchen string.


Rosolare con cura la carne da tutte le parti quindi coprire completamente la carne col vino, aggiungere pinoli, mandorle e uvetta sultanina tritati insieme.

Brown carefully the meat on all sides so completely cover the meat with the wine, add pine nuts, the almonds and the raisins, chopped all together.


Lasciar cuocere lentamente per 4 - 5 ore, aggiungendo all'occorrenza un goccio di brodo di carne, avendo cura di girare la carne ogni mezz'ora e senza coprire la casseruola, in modo che il vino possa evaporare.

Allow to simmer for 4-5 hours, adding some beef broth ,if necessary , making sure to turn the meat every half hour, and without covering the pan, so that the wine to evaporate.


A cottura ultimata togliere la carne, slegarla ed affettarla.
Far addensare il sugo e tritarlo col frullatore ad immersione, in modo da ottenere un crema densa.
Versare la salsa ottenuta, ben calda, sulle fette di stracotto e servire.

When cooked, remove the string of the meat and slice it.
Thicken the sauce and chop with immersion blender, so you get a thick cream.
Pour the sauce, very hot, over the meat slices and serve.

Recensione su The Wine Advocate











The Wine Advocate, più  noto come The Wine Advocate di Robert Parker, e informalmente abbreviato TWA o WA o, più recentemente, RP, è una pubblicazione bimestrale americana a carattere globale sul mondo del vino che contiene tutti i consigli per i consumatori da parte del noto critico Robert Parker.

La rivista, nata nel 1978, non accetta nessuna pubblicità e vanta la pubblicazione di più di 12.000 recensioni all'anno, ottenute attraverso il sistema di rating di Parker, che impiega una scala di qualità da 50 a 100 punti (Parker Points o semplicemente RP).

Pur non essendo la prima pubblicazione americana sul mondo del vino, né la prima ad utilizzare una scala numerica per definire il gradimento di un vino, The Wine Advocate è stata la prima a usarla come misuratore di gradimento del consumatore medio americano. Queste valutazioni sul vino hanno pertanto un effetto significativo sulla performance economica del vino esaminato. Il sistema fornisce infatti delle linee guida per quantificare la qualità di un vino in un formato popolare: i rivenditori usano comunemente  i  "punteggi Parker" per pubblicizzare i propri vini. I punteggi sono diventati addirittura dei punti focali per i collezionisti e gli investitori che acquistano vini di prim'ordine nella speranza che i punteggi Parker aumentino il valore del vino.

Il responsabile per la revisione dei vini d'Italia è la giornalista americana  Monica Larner, due volte vincitrice del Best Young Journalist of the Year (2008 e 2010), uno dei massimi onori assegnato ogni anno al Vinitaly e, nel 2012, vincitrice del Best International Journalist da parte del Comitato Grandi Cru d'Italia a Vinitaly, nel 2013 è stata selezionata da Parker, che l’ha definita come "... uno degli scrittori più completi in ambito di vini italiani", per entrare a far parte del suo team di lavoro.

In un recente viaggio in Italia, Monica è stata graditissima ospite della nostra cantina dove ha potuto vedere di persona le coltivazioni di vite, le botti di affinamento e assaggiare direttamente sul posto i nostri prodotti.
A qualche mese di distanza siamo lieti di poter esibire il voto assegnato al Chianti Rufina D.O.C.G. “Podere il Pozzo” 2012 di ben 87+ RP e al Chianti Rufina D.O.C.G. “Podere il Pozzo Riserva” 2011 di ben 91+ RP.

Riportiamo di seguito i testi completi delle recensioni. Questo quello relativo al Il Chianti Rufina D.O.C.G. “Podere il Pozzo” 2012:
“Il Chianti Rufina D.O.C.G. “Podere il Pozzo” 2012 si apre coi toni dolci del profumo di rose rosse e di pasta di mandorle. Lieve sentore di gomma naturale nel finale, seguito da catrame e resina. Il vino è piacevole in bocca, risultando insieme fresco e corposo. Il vero carattere del Sangiovese.

Il Podere il Pozzo è un posto pazzesco. Ho avuto l’occasione di visitarlo di persona. Il vigneti sono posizionati in un posto completamento isolato, in fondo ad una impossibile strada sterrata. Ma le belle sorprese sono spesso nascoste alla vista, e questa è stata una di quelle belle sorprese."

e questo quello del Chianti Rufina Riserva D.O.C.G. “Podere il Pozzo” 2011:

"Un elegante vino vecchio stile, il Chianti Rufina Riserva D.O.C.G. “Podere il Pozzo” 2011 si apre con bei toni di spezie delicate, frutti di bosco, prugne, mirtilli essiccati e foglie di tabacco. Il vino si mostra con un colore scuro e concentrato, con le note dolci della ciliegia e del cassis. L'aspetto più attraente di questo vino, comunque, sono le note fresche di erbe balsamiche, olio al rosmarino e zenzero che si sentono intensamente dal bicchiere. E' un vino bello ed elegante che rappresenta il Chianti Rufina. Un punteggio eccellente difficile da battere.

Il Podere il Pozzo è un posto pazzesco. Ho avuto l’occasione di visitarlo di persona. Il vigneti sono posizionati in un posto completamento isolato, in fondo ad una impossibile strada sterrata. Ma le belle sorprese sono spesso nascoste alla vista, e questa è stata una di quelle belle sorprese."

Anche se raggiungibile solo con strade bianche a tratti molto impervie, il fascino del paesaggio collinare costellato di boschi e vigneti a ridosso dell’appennino ha conquistato anche questa nota reporter americana.


The Wine Advocate, fully known as Robert Parker's Wine Advocate, and informally abbreviated TWA or WA or more recently as RP, is a global bimonthly winepublication based in the United States featuring the consumer advice of wine critic Robert M. Parker.

Born in 1978, accepting no advertising, the newsletter publishes in excess of 12,000 reviews per year, utilizing Parker's rating system that employs a 50-100 point quality scale (Parker Points or simply RP).

While not the first American wine publication, nor the first to use a numerical wine ratings scale, The Wine Advocate was the first to use it as parallel to the American educational grading system. Monica Larner is responsible for reviewing the wines of Italy, two-time winner of the Best Young Journalist of the Year (2008 and 2010), one of the top honors given out yearly at the Vinitaly exposition and, in 2012, winner of the Best International Journalist also presented by the Comitato Grandi Cru d'Italia panel at Vinitaly, was selected in 2013 by Parker, that has escribed her as "...one of the most comprehensive writers of Italian wines out there", to be a member of his staff. 

In a recent trip to Italy, Monica was very welcome guest in our winery where she could see for yourself the cultivation of the vine, the barrels of aging and taste our products.
A few months later we are pleased to be able to show the result awarded to the Chianti Rufina D.O.C.G. "Podere il Pozzo" 2012 of 87+ RP and to the Chianti Rufina D.O.C.G. "Podere il Pozzo Riserva" 2011 of 91+ RP.

"An elegant old school wine, the 2011 Chianti Rufina Riserva opens to beautiful tones of delicate spice, wild berry, prune, dried blackberry and tobacco leaf. The wine shows dark color and concentration with sweet endnotes of cherry and cassis. The most attractive aspect to the wine, however, are the bright notes of balsam herb, rosemary oil and dried ginger that rise with intensity from the glass. This is a very beautiful and elegant wine representing the Chianti Rufina appellation. You really can't beat this excellent value.

Although accessible only by dirt roads, sometimes very steep, the charm of the hilly landscape dotted with forests and vineyards close to the Apennines also won the famous American reporter.

SFIZIOSE RICETTE: la salsa al vino!


Vi proponiamo questa salsa dolce da abbinare a budini di riso, panna cotta, ricotta o simili ma che potrete utilizzare anche per guarnire una fetta di pandoro o di panettone. La presenza della marmellata di lamponi e dei canditi la rende adatta anche per una colazione diversa dal solito: tutto l'alcool degli ingredienti infatti sfumerà in fase di cotture, così da rendere la crema delicata e leggera.

We offer you this sweet sauce that you can combine with rice puddings, panna cotta, cheese or the like but you can also use to garnish a slice of pandoro or panettone. The presence of raspberry jam and candied also makes it suitable for a breakfast different from usual: all the alcohol of the wine will vanish during cooking, so as to make the cream delicate and light.


Ingredienti                                                           Ingredients 
(per circa 1/2 chilo di crema):                           (about 1/2 pound of cream):
1 bottiglia di Chianti Cantine Bellini                       1 bottle of Chianti Cantine Bellini
un vasetto di marmellata                                       a jar of jam of
di lamponi o di fragole (da 250 gr)                         raspberries or strawberries (250 gr)
100 gr di uva passa                                               100 gr of raisin
50 grammi di scorza d’arancia candita                 50 grams of candied orange peel
50 grammi di scorza di cedro candita                   50 grams of candied cedar peel
50 grammi di pinoli                                                 50 grams of pine nuts
1 cucchiaio di fecola di patate                               1 tablespoon potato starch
1 bicchierino di Maraschino                                   a little glass of Maraschino liqueur

Preparazione:
Far bollire il vino in una casseruola a fuoco moderato finché non si è ridotto a circa 1/3 del volume iniziale, aggiungere l’uvetta ammollata e strizzata, i canditi di arancia e cedro, i pinoli e la marmellata.

Preparation:
Boil the wine in a saucepan over medium heat until it is reduced to about 1/3 of the original volume, add the soaked and drained raisins, the candied orange and the cedar, the pine nuts and the jam.


Appena il composto riprende il bollore, aggiungere la fecola e continuare a mescolare fin quando non si ottiene una salsa densa. Togliere dal fuoco e aggiungere il Maraschino. 

La salsa può essere conservata in frigorifero come una marmellata. Vi consigliamo di lasciarla comunque riposare una notte prima di assaggiarla, in modo che tutti gli ingredienti si amalgamino armonicamente.

As soon as the mixture takes the boil, add the flour and continue stirring until you get a thick sauce. Remove from heat and add the Maraschino.

The sauce can be conserved in the fridge as the common jam. We advise you to leave it repose overnight before tasting, so that all the ingredients blend harmoniously.


La crema si può anche offrire in accompagnamento a un formaggio stagionato come il pecorino: sicuramente un'alternativa originale alla classica marmellata o al miele!

The cream can also be offered as an accompaniment to a hard cheese such as pecorino: definitely an original alternative to the classic jam or honey!
