SFIZIOSE RICETTE: Cinghiale in umido


Continua la nostra proposta di carni al sugo tipiche della tradizione toscana con la ricetta del Cinghiale in umido. Una preparazione molto lunga da realizzare, ma che in realtà non presenta particolari difficoltà di esecuzione: una ricchezza di ingredienti che contribuiscono a rendere il vino protagonista insieme alla carne!

INGREDIENTI:                                                     INGREDIENTS:

1 cipolla                                                                   1 onion
1 carota                                                                   1 carrot
1 costa di sedano                                                   1 celery
100 gr di salsa di pomodoro concentrato            100 gr of concentrated tomato sauce
750 ml di passata di pomodoro                            750 ml of tomato sauce
100 gr di olive nere                                                 100 gr of black olives
aromi e spezie: ginepro, chiodi di garofano,        seasoning: juniper, cloves,
salvia, timo, rosmarino, alloro                                sage, thyme, rosemary, bay leaves
olio extravergine di oliva                                         extra virgin olive oil

PREPARAZIONE:
Tagliare a pezzi la carne e lavarla in un recipiente con vari passaggi con acqua, fintanto questa non risulti pulita. Far marinare lo spezzatino di cinghiale per almeno 12 ore completamente coperto dal vino (utilizzare un vino leggero, come il Rosso Toscano I.G.T. Cantine Bellini, in quanto il liquido dopo viene eliminato) in infusione con tutti gli aromi e le spezie e grani di pepe.

Scolare la carne, buttare via il vino e fare un battuto con tutti gli aromi.

In una casseruola preparare un soffritto con la cipolla, il sedano e la carota finemente tritati, quindi unire la carne e far rosolare a fuoco vivace. Se la carne rilascia del liquido, eliminarlo con un cucchiaio.

Aggiungere il vino (in questo caso serve invece un vino corposo come il Chianti Rufina Riserva D.O.C.G. Cantine Bellini), la passata di pomodoro, il concentrato in tubetto, un bicchiere d’acqua, il trito di aromi precedentemente preparato, sale e pepe.

Abbassare la fiamma e lasciar cuocere per 3-4 ore, avendo cura di girare ogni mezz’ora.
A cottura quasi ultimata aggiungere le olive e servire ben caldo.


PREPARATION:
Cut the meat into pieces and wash it in a container with various passages with water, as long as this it is clean. Marinate the boar stew for at least 12 hours, fully covered by the wine (use a light wine, such as Rosso Toscano IGT Cantine Bellini, since liquid is removed after) infuse with all the seasoning and the  peppercorns.

Drain the meat, throw away the wine and chop all the aromas.

In a saucepan, sauté the onion, celery and carrot finely chopped, then add the meat and brown it over high heat. If the meat releases the liquid, remove it with a spoon.

Add the wine (in this case serves a full-bodied wine such as Chianti Rufina Riserva D.O.C.G. Cantine Bellini), the tomato sauce, the concentrated tomato sauce, a glass of water, the chopped herbs, salt and pepper.

Lower the heat and simmer for 3-4 hours, taking care to turn every half hour.

When almost cooked, add the olives and serve hot.

SFIZIOSE RICETTE: un Barbecue da Re!


E’ estate! Togliamoci per una volta la voglia...
Dopo una passeggiata rilassante, c'è chi prende il sole, chi si stiracchia e sopra l’erba si stende…finchè d’improvviso un fuoco vivo si accende!
Ascolta il suono!
Il pane si spezza. La legna scoppietta. La brezza rinfresca. La musica incalza e la carne avvampa!
Fai della griglia il tuo trono (…ma non ti ci sedere)!!!

La Marinata
-----------
Marinare la carne prima di grigliarla le conferirà un gusto (ed un profumo) unici.
Per ogni carne esiste una marinatura classica ma, spaziando con la fantasia, i sapori che si possono creare sono quasi infiniti.

La più classica delle marinature prevede olio di oliva, trito di erbe aromatiche (rosmarino, salvia e alloro), spicchio d’aglio e vino: niente sale!

A questa base, possono essere aggiunti tutti gli aromi mediterranei (meglio se freschi, ma vanno benissimo anche secchi) e, ovviamente, il peperoncino. Tuttavia potete osare anche con qualche sapore insolito, come lo zenzero (fantastico per il pesce), il dragoncello o la soia.

Qualunque sapore decidiate di aggiungere alla marinatura, ricordatevi che deve essere grassa, oleosa, speziata e leggermente acida: senza queste caratteristiche le alte temperature della brace renderanno la vostra carne dura.

E' importante utilizzare solo un ingrediente acido: limone, aceto, yogurt, vino bianco. L'Olio da usare deve essere rigorosamente extra vergine a crudo.

Utilizzando un olio intensamente saporito come il Pozzo, può bastare qualche cucchiaio: non temete un aumento di grassi, ricordate che si tratta di un condimento sano!

Il tempo di permanenza della carne nella marinatura determinerà il suo sapore: in genere lasciate marinare per almeno 4 ore la carne di manzo, dalle 2 alle 4 invece quelle di maiale e di pollo (non di più: oltre a questo tempo di marinatura la carne tenderà a sfaldarsi).

La stesso trattamento può essere esteso anche a pesce e verdure, lasciandoli riposare immersi nella marinata per qualche minuto o ora, a seconda della ricetta.

Una volta messa in contatto con alimenti crudi, la marinata non può essere utilizzata per altri scopi (neanche in cottura). Una volta estratti i cibi dall'immersione nel composto è necessario ricordate di farli scolare bene, tamponando il liquido in eccesso con carta da cucina assorbente.


Marinade
-----------
Marinate the meat before grilling will give it a taste (and smell) only. 

For every meat there is a classic marinade, but ranging with the fantasy, the flavors that you can create are almost endless.

The most classic marinade includes olive oil, chopped fresh herbs (rosemary, sage and bay leaves), garlic and wine: no salt!

On this base, it can be added all the Mediterranean flavors (preferably fresh, but also dried are fine) and, of course, the chili peppers. However, you can dare even with some unusual taste, like ginger (great for fish), tarragon or soy.

Whatever flavor you choose to add to your marinade, remember that it must be greasy, oily, spicy and slightly sour: without these features the high temperature of the grill will make your meat hard.

It's important to use only an acid ingredient: lemon, vinegar, yogurt, white wine. The extra virgin olive oil must be raw.

Using an intensely flavorful oil like the Podere il Pozzo, some tablespoons are enough: do not fear an increase in fat, remember that it is a healthy condiment!

The permanence of the meat in the marinade will determine its taste: in general, let marinate the beef for at least 4 hours and the pork and chicken from 2 to 4 hours (no more, or the meat will tend to fall apart).

The same treatment can be extended to fish and vegetables, leaving them to stand immersed in the marinade for a few minutes or hours, depending on the recipe.

Once  the marinade have been in contact with raw foods, it can not be used for other purposes (even in cooking). Once extracted from the immersion, the foods have to be to drain well, bloting excess liquid with absorbent kitchen paper.

Suggeriamo qualche trucco da usare nella fase di cottura per ottenere qualche effetto speciale

Il sale aromatizzato
Si trova ormai in vendita dappertutto, ma può essere confezionato facilmente anche in casa, tritando del sale grosso con erbe aromatiche fresche e spezie.
Basta spargere qualche grano di sale sulla griglia fredda per donare un sapore unico a carne o verdure (che non vanno mai salate direttamente!).
La carne non deve essere mai salata prima della cottura: il sale elimina l’acqua e usandolo a inizio cottura si rischia di farla diventare durissima!
A fine cottura si può invece aggiustare i sapori aggiungendolo quanto basta.

Le erbe aromatiche
Le erbe aromatiche fresche (ma anche quelle secche) sono le migliori amiche della griglia. Scelte classiche sono il timo e il rosmarino, ma potete anche spaziare e “osare” con altri aromi. Attenzione però: tenete le erbe sempre sul lato superiore della carne (quello non rivolto verso la griglia); se si bruciano danno un sapore amarissimo!

Pennello da Chef
Preparate un’emulsione con olio, limone, aglio tritato e le vostre erbe aromatiche preferite. Se vi piacciono i sapori piccanti, non lesinate con il peperoncino o il tabasco. Mentre grigliate la carne, spennellatela con questa salsa da entrambi i lati (se si tratta di carni rosse importanti, potete aggiungere anche un cucchiaino di senape rustica).

Un goccio di salsa
Se avete intenzione di spaziare con i sapori, a fine cottura adagiate la carne grigliata in un vassoio e bagnatela con qualche goccio di salsa. Trattenete quindi le fauci per qualche minuto in modo che il calore residuo favorisca il propagarsi dell'aroma.

Here some tricks to use in the cooking stage to achieve some special effect

Flavored salt
Now you can find it on sale everywhere, but it can be packed easily in your own kitchen chopping coarse salt with fresh herbs and spices. 
Just sprinkling a few grains of salt on the cool grill, you can give a unique flavor to meat or vegetables (which are never directly salty!). 
The meat should never be salted before cooking: salt removes water and if you use it first to start cooking, you make the meat very hard! 
After cooking you can instead adjust the flavors by adding it as required.

Herbs
Fresh herbs (but also dried ones) are the best friends of the grill. Classic choices are thyme and rosemary, but you can also wander and "risk" with other flavors. Beware: keep always the herbs on top of the meat (not on the facing on the grill); if burn, give a bitter taste!

Chef's brush
Prepare an emulsion with oil, lemon, garlic and your favorite herbs. If you like spicy flavors, do not be stingy with the pepper or Tabasco. While grilling meat, brush them with this sauce on both sides (in the case of red meats, you can also add a teaspoon of mustard).

A drop of sauce
If you are going to space with the flavors, place the grilled meat in a big dish and moisten with a few drops of sauce. Then hold the mouth for a few minutes so that the aroma spread of.



Le salse
--------
Utilizzare le salse renderà i cibi grigliati esotici e speziati, ricordandosi di aggiungerle in piccola quantità e soltanto a fine cottura, poco prima di servire in tavola. Un espediente semplice e di grande effetto per elevare un picnic a esperienza di alta cucina!

Salsa barbecue
Per prepararla, tritate finemente la cipolla e l’aglio e fateli rosolare in una casseruola nel burro. Fate sfumare con un goccio d’aceto e poi aggiungete la passata e il concentrato di pomodoro. Unite la senape, il peperoncino e un po’ di zucchero e continuate a mescolare. Fate cuocere per 20 minuti e poi fate raffreddare. Filtrate la salsa e aggiungete sale, pepe, tabasco e salsa Worcester a piacere.

Salsa alla menta
Ideale per le carni dal sapore molto forte (come l’agnello), può essere abbinata anche alle carni bianche, come pollo o tacchino. Nel mixer mettete un mazzo di menta fresca e un cucchiaino di zucchero, tre cucchiai di aceto bianco di mele e tre di olio. Aggiustate di sale e pepe e tritate tutto.

Salsa al vino
Fate una riduzione di vino, mettendo in un pentolino 2 bicchieri di vino rosso invecchiato,  un trito di carote, un sedano, una cipolla a dadini e una foglia di alloro. Quando avrete ottenuto la riduzione, cuocete ancora per due minuti. Filtrate la salsa e aggiungetela alle carni rosse.

Salsa di birra alle mele
Questa salsa è perfetta da abbinare alle carni di maiale. Tagliate a dadini sottili una mela rossa e fatela rosolare in padella con una noce di burro e una foglia di alloro. Non appena prendono un po’ di colore, coprite le mele con due bicchieri di birra rossa. Portate a bollore e lasciate che le mele si ammorbidiscano. Frullate tutto nel mixer e aggiustate di sale e pepe.


Sauces
--------
Use the sauces make the grilled foods exotic and spicy, but remember to add in small quantities and only at the end of cooking, just before serving. A simple trick to  raise a picnic to an experience of haute cuisine!

Barbecue sauce
To prepare it, chop finely the onion and the garlic and brown them with butter. Deglaze with vinegar, then add the tomato sauce and pass. Combine mustard, pepper and a little sugar and continue stirring. Cook for 20 minutes and then let cool. Filter the sauce and add salt, pepper, Tabasco and Worcester sauce.

Mint sauce
Ideal for very strong meat (like lamb), it can be combined also with white meats such as chicken or turkey. Put a bunch of fresh mint and a teaspoon of sugar in the mixer, add three tablespoons of apple cider vinegar and three of oil. Season with salt and pepper and chopped it all.

Wine sauce
Make a wine reduction, putting in a saucepan 2 glasses of red wine aged, chopped carrots, celery, a diced onion and a bay leaf. When you've got the reduction, cook for two minutes. Filter the sauce and add it to red meat.

Beer sauce with apples
This sauce is perfect to combine with the pork. Diced fine a red apple and sauté in a pan with a knob of butter and a bay leaf. When have take a little brown color, cover the apples with two glasses of red beer. Bring to a boil and let the apples soften. Mixer everything in a blender and season with salt and pepper.

Quando avrete finito di arrostire carne e verdure lasciate che la griglia si riscaldi ancora un po’. In questo modo riuscirete a bruciacchiare gli avanzi di cibo che sono rimasti attaccati alla griglia.

Poi spegnete il fuoco e dopo qualche minuto, provate a spruzzare sulla piastra che si sta raffreddando un pò di succo di limone, di arancia o di mandarino diluito con acqua. Questo espediente è utile per smorzare l’odore persistente di cibo che rimane alla fine del pasto nella zona di cottura.
Potete anche farlo anche prima di cuocere il pesce, per dare un aroma in più.

Infine, per pulire la griglia, prima che si raffreddi del tutto, infilate con una forchetta mezza cipolla e passatela energicamente sulla griglia per sgrassarla. Rimedio naturale, veloce ed economico: da provare!


...at the end of the meal
---------------
When you have finished to grill meat and vegetables, let the grill to warm up a little . This will help you to scorch food scraps that remained attached to the grill.

Then turn off the heat and after a few minutes, try to spray on the grill a bit of lemon juice, orange or tangerine juice diluted with water. This trick is useful to dampen the lingering smell of food that remains at the end of the meal in the kitchen.
You can also do this even before you cook the fish, to give a nice citrus flavor.

Finally, to clean the grill, before it cools completely, strung with a fork an onion and pass it vigorously on the grill to degrease it. Natural, fast and cheap remedy: try it!

IN GITA AL PODERE IL POZZO. Un Picnic nel Chianti Rufina


Alla fine dei numerosi impegni promozionali, logistici e organizzativi della Cantina, capita di sentire il bisogno di una sosta che aiuti a rinnovare le forze e sollevare il morale per affrontare nuove sfide.

At the end of the promotional, logistical and organizational jobs of the winery, happen to feel the need to stop that helps to renew and raise the morale of the forces to meet new challenges.


Il nostro miglior rimedio, in questi casi, consiste nell'abbinare una piacevole gita sulle sinuose colline del Chianti Rufina ad un picnic all'aria aperta, soprattutto in questo periodo tra primavera ed estate.

GUSTA RUFINA 2011 - Parte III. Le cene della settimana.

Vogliamo rendere omaggio ai ristoratoratori che ci hanno ospitato durante le serate della kermesse del Gusta Rufina.

L'Osteria dei Pazzi, vicino a Piazza Santa Croce, rimane fedele alla sua allegra e scanzonata accoglienza. L'ambiente genuino e vitale della sala mette a proprio agio l'affamato avventore che non può che deliziarsi alla vista del menù.

Di particolare pregio gli agnolotti di ricotta e spinaci conditi con sugo di gota e porri: delicati ma saporitissimi.

Anche l'intracosta al pepe verde e senape è stata una gustosa sorpresa per il suo equilibrio di sapori forti.

Le vere specialità sono sempre e comunque le tagliate di manzo, conditissime e belle tenere.


Of particular value the agnolotti with ricotta cheese and spinach served with leek sauce and cheek: delicate but tasty. 

Even the beefsteak with green pepper and mustard was a tasty surprise for its balance of strong flavors.  

The real specialty is always the steak, very seasoned and tender.


Notevole anche la carrellata di dessert casalinghi proposti: tanti e buoni, per accontentare tutti i gusti.

Noi abbiamo provato la mousse di yogurt ai frutti di bosco e il CREMINO che è una vera goduria di crema, cioccolato e pinoli.

Noteworthy are the homemade desserts: many and good, to suit all tastes. 

We tried the yogurt mousse with berries and the CREMINO, which is a real pleasure cream, with chocolate and pine nuts.


Per chi vuol provare un ristorante tranquillo in pieno centro a Firenze e non vuole incappare in una trappola per turisti...ecco quello che fa per voi!

For those who want to try a quiet restaurant in the center of Florence and doesn’t want a tourist trap ... that's right for you!

La trattoria il Maccherone è l'epilogo ideale di qualsiasi scampagnata in Val di Sieve. L'ambiente accogliente, semplice e familiare della sala si contrappone alla sua "grande cucina".

The restaurant Il Maccherone is a perfect ending to any picnic in the Val di Sieve. The warm simple and family room is in contrast to his "big kitchen".

Un tripudio di sapori tutti favolosamente accostati dal nostro vino: ravioli con la trippa, tagliolini al tartufo, steccata in forno al rosmarino e per finire il fritto misto di pollo e coniglio.

A blaze of flavors, all combined by our fabulous wine: ravioli with trippa, noodles with truffles, steak with rosemary and also the fried chicken and rabbit.

Obbligatorio per terminare lo sgroppino al limone ... ma per i più audaci c'e' sempre l'abbondante panna cotta!

The “sgroppino” of lemon is required to terminate the dinner ... but for the more adventurous there is always the rich “panna cotta”!

SFIZIOSE RICETTE. Filetto di coniglio con cioccolato e rosmarino





Ingredienti per 4 persone:
2 filetti di coniglio (circa 800 grammi)
30gr di cioccolato fondente al 70%
2 cipolle
1 sedano
1 carota
qualche spicchio d’aglio
1 rametto di rosmarino
1 bicchiere di vino bianco toscano Cantine Bellini
½ bicchiere d’olio extra vergine d’oliva "Podere il Pozzo"
1 bicchiere di brodo
Timo, alloro, sale e pepe

Pela e taglia la cipolla, due costole di sedano e la carota a pezzetti. Fai dorare le ossa frantumate e i ritagli di coniglio nell'olio caldo in una pentola capiente. Aggiungi i pezzetti di cipolla, di carota e di sedano, il timo e l'alloro. Versa 1,5 litri d'acqua, porta a ebollizione e lascia cuocere 45 min a fuoco lento. Passa il brodo di coniglio con un colino, conservalo al fresco.

In una padella fai un soffritto d’olio d’oliva con cipolla e sedano, quindi aggiungi due spicchi d’aglio, timo, alloro e rosmarino. Aggiungi i filetti di coniglio e dorare a fuoco alto. Salare e pepare. Passare in forno per circa cinque minuti a 180°. Sfornare e sfumare con un bicchiere di vino bianco. Quando è evaporato circa metà del vino, aggiungere un bicchiere di brodo (precedentemente preparato) e il cioccolato a pezzettini e lasciar sfumare sul fuoco finchè non evapora almeno un terzo della parte liquida. Porre il coniglio su un vassoio e passare al colino il sugo, quindi cuocerlo a fuoco lento in modo da renderlo più cremoso. Aggiungere del peperoncino per renderlo più piccante. Prima di servire in tavola, dividere il coniglio a pezzetti e ricoprirlo con la salsa calda.

Ingredients for 4 people:

2 fillets of rabbit
30gr of 70% dark chocolate
2 onions
1 celery
1 carrot
garlic
rosmary
a glass of white tuscany wine Cantine Bellini
½ glass of olive oil "Podere il Pozzo"
a cup of broth
Thyme, laurel, salt and pepper

Clean and cut the onion, celery and the carrot.
Make brown the shattered bones  and the scraps of the rabbit inside the pot covered with a thin film of oil.  Add the chopped onion, carrot and celery, thyme and bay leaves. Add 1.5 liters of water, let boiling and cook over low heat for 45 minutes. Pass the soup through a sieve and allow to cool.

In a pan with in olive oil make a fried mixture of onion and celery, then add garlic, thyme, bay leaves and rosemary. Add the fillets over high heat and brown the rabbit. Add salt and pepper. Bake in oven for about five minutes at 180 degrees. Remove from oven and deglaze with a glass of white wine Cantine Fratelli Bellini. When about half of the wine has evaporated, add a cup of stock (previously prepared) and the chocolate made in small pieces. Let it on the stove until at least a third of the liquid is evaporates. Place the rabbit on a platter, strain the sauce and cook over low heat to make it creamier. Add peppers to make it more spicy. Before serving, divide the rabbit into pieces and cover with hot sauce.
