RADICI.

HISTORICAL RESEARCH AND TEXT OF LUCIANO ARTUSI
In ancient times, the Tuscan red wine came, for the most part, from the Chianti area, the area of Poggibonsi and Rufina. The small town of Rufina, just outside Florence, has always been famous for its ruby, lively and robust red wine.
Until the fourteenth century the typical Tuscan container for wi.e was the flask. This glass vessel with pear-shaped has with a very long neck, containing a liter of wine and three quarters, and, in the past, was blown from the flask-man.

In the center of Florence, the angle formed by the intersection of Via Condotta and Via Calzaiuoli was known as Canto dei Fiascai, because many of these craftsmen had their own workshops or the warehouses of flasks. The "fiascaio" (flask-man) not only produced the glass container, the bare flask, but also took care of its coating using marsh grasses like the Carex riparia: the stuffing had the function to protect the glass from impacts and, at the same time, also served as thermal insulation against deterioration of the beverage.
From Rufina, the flasks full of wine took the road to Florence, cleverly loaded as a basket, like a pyramid, on long carts drawn, generally, by horses; to set up the basket with around 2000 fragile flasks, skill and experience were very needed: only few craftsmen were able to build this architectural masterpiece!

When the mighty "ships" of flasks arrived in Florence, the streets resounded with the clatter of horses, the cracking of the whip, the creak of bridles; then, the artisans proceeded to the careful unloading at the tavern or the restaurant; here every flask was accompanied by a wisp of hemp, put in the stuffing, which was used to remove the thin layer of oil that had been purposely put on wine while being flasked. During the Repubblica Fiorentina, a huge pyramid was built on September 29 of each year, after the arrival of the new wine: after receiving the blessing in the church of Via Calzaiuoli, the wine was brought to the Palazzo della Signoria, where the Gonfaloniere toasted together with Priori to the health of the people of Florence.
