Sabores Italianos con Igles Corelli al Festival Italiano di Lima



Lo chef Igles Corelli, figura indiscutibilmente importante della cucina italiana d'autore, porta sulla tavola del festival italiano di Lima i sapori più rappresentativi della nostra tradizione culinaria.

Come il direttore di una orchestra composta da sensazioni gustose e profumi sfiziosi, ha messo in scena (o meglio, nel piatto degli invitati) un menù di prelibatezze, rivisitate con creatività e fantasia. Vi presentiamo di seguito il carnet della serata:

Antipasto: Tartare di tonno con olive e capperi, abbinati a spumante Riccadonna Asti

Primo Piatto: Lasagnetta croccante, ragout di manzo, zabaione di parmigiano e mortadella croccante abbinati a Sangiovese 2008 Farnese e Chianti 2009 Cantine Fratelli Bellini

Secondo piatto: Filetto di merluzzo con polenta, pomodorini ed erbe aromatiche, abbinato a birra Peroni

Dessert: Creme Brulee abbinato a Orvieto Classico 2009 Ruffino

Al festival è stato distribuito anche un ricettario firmato dallo chef Igles Corelli, con la presentazione di Alfredo Toracchini Antonaros in veste di gastronomo ed enologo. Più che un ricettario vero e proprio, questo libretto vuol essere una lista di suggerimenti utili per combinare gli ingredienti più vari della cucina italiana in modo inusuale.

E' stato veramente piacevole vedere il nostro vino scelto come abbinamento per il primo piatto. Anche a Lima abbiamo portato il gusto di un buon bicchiere di Chianti!

The chef Igles Corelli, a very important figure of the Italian cuisine, handed on the table of the Italian festival of Lima the most representative tastes of our culinary tradition.

As the Director of an orchestra of delicious sensations and pleasing fragrances,he staged (or, better, he cooked) a menu of delights, revisited with creativity and fantasy. We present here the program of the event:

Appetizer: Tuna tartare with olives and capers, paired with sparkling Asti Riccadonna

First Dish: Crisp Lasagnette, ragout of steer, zabaione of parmesan cheese and crisp mortadella combined to Sangiovese 2008 Farnese and to Chianti 2009 Cantine Fratelli Bellini

Second Dish: Fillet of codfish with polenta, little tomatoes and aromatic grass combined to Peroni beer.

Dessert: Creme Brulee combined to the Orvieto Classico 2009 Ruffino.

At the festival has been distributed also a cookbook signed by the chef Igles Corelli, with a presentation of Alfredo Toracchini Antonaros, a wine and gastronomy expert. More than a real cookbook, this book wants to be a list of useful suggestions to combine the various ingredients of the Italian cuisine in a lot of different ways.

It's really pleasant to see our wine selected as combining for the first dish. Also in Lima we have brought the taste of a good glass of Chianti!

SFIZIOSE RICETTE. Filetto di coniglio con cioccolato e rosmarino





Ingredienti per 4 persone:
2 filetti di coniglio (circa 800 grammi)
30gr di cioccolato fondente al 70%
2 cipolle
1 sedano
1 carota
qualche spicchio d’aglio
1 rametto di rosmarino
1 bicchiere di vino bianco toscano Cantine Bellini
½ bicchiere d’olio extra vergine d’oliva "Podere il Pozzo"
1 bicchiere di brodo
Timo, alloro, sale e pepe

Pela e taglia la cipolla, due costole di sedano e la carota a pezzetti. Fai dorare le ossa frantumate e i ritagli di coniglio nell'olio caldo in una pentola capiente. Aggiungi i pezzetti di cipolla, di carota e di sedano, il timo e l'alloro. Versa 1,5 litri d'acqua, porta a ebollizione e lascia cuocere 45 min a fuoco lento. Passa il brodo di coniglio con un colino, conservalo al fresco.

In una padella fai un soffritto d’olio d’oliva con cipolla e sedano, quindi aggiungi due spicchi d’aglio, timo, alloro e rosmarino. Aggiungi i filetti di coniglio e dorare a fuoco alto. Salare e pepare. Passare in forno per circa cinque minuti a 180°. Sfornare e sfumare con un bicchiere di vino bianco. Quando è evaporato circa metà del vino, aggiungere un bicchiere di brodo (precedentemente preparato) e il cioccolato a pezzettini e lasciar sfumare sul fuoco finchè non evapora almeno un terzo della parte liquida. Porre il coniglio su un vassoio e passare al colino il sugo, quindi cuocerlo a fuoco lento in modo da renderlo più cremoso. Aggiungere del peperoncino per renderlo più piccante. Prima di servire in tavola, dividere il coniglio a pezzetti e ricoprirlo con la salsa calda.

Vi consigliamo di servirlo accompagnato da una bottiglia di Canto Lupo "Podere il Pozzo"


Ingredients for 4 people:

2 fillets of rabbit
30gr of 70% dark chocolate
2 onions
1 celery
1 carrot
garlic
rosmary
a glass of white tuscany wine Cantine Bellini
½ glass of olive oil "Podere il Pozzo"
a cup of broth
Thyme, laurel, salt and pepper

Clean and cut the onion, celery and the carrot.
Make brown the shattered bones  and the scraps of the rabbit inside the pot covered with a thin film of oil.  Add the chopped onion, carrot and celery, thyme and bay leaves. Add 1.5 liters of water, let boiling and cook over low heat for 45 minutes. Pass the soup through a sieve and allow to cool.

In a pan with in olive oil make a fried mixture of onion and celery, then add garlic, thyme, bay leaves and rosemary. Add the fillets over high heat and brown the rabbit. Add salt and pepper. Bake in oven for about five minutes at 180 degrees. Remove from oven and deglaze with a glass of white wine Cantine Fratelli Bellini. When about half of the wine has evaporated, add a cup of stock (previously prepared) and the chocolate made in small pieces. Let it on the stove until at least a third of the liquid is evaporates. Place the rabbit on a platter, strain the sauce and cook over low heat to make it creamier. Add peppers to make it more spicy. Before serving, divide the rabbit into pieces and cover with hot sauce.

We recommend to serve with a bottle of Canto Lupo "Podere il Pozzo"

Salone del Gusto 2010 a Torino

La prossima settimana, dal 21 al 25 ottobre, aprirà a Torino il Salone internazionale del Gusto. E' un'ottima occasione per tutti i buongustai che leggono queste pagine fare una gita nel capoluogo Piemontese, che già normalmente offre delle specialità tipiche molto ghiotte.

Il Salone del Gusto è una festa fatta per conoscere meglio ciò che mangiamo e celebrare insieme l'umanità che è coinvolta nella sua produzione. Si propone principalmente come un'evento educativo, perchè permette di imparare, conoscere, confrontare e informarsi sulla parte edibile della nostra identità: il cibo.
Nello stesso luogo si incontreranno contadini e artigiani, il mondo della cultura accademica e i cuochi, grandi cultori dell'enogastronomia e "semplici" appassionati, dando vita a scambi e amicizie.

E' disponibile un'intero catalogo di laboratori per conoscere a fondo e assaggiare ogni tipo di alimento, guidati da esperti o direttamente dai produttori; un modo semplice e immediato per aprofondire la conoscenza delle tecniche, della filosofia o solo per sapere degli aneddoti sulla produzione o l'ideazione dei prodotti.

I laboratori danno largo spazio anche al tema del vino. Si possono conoscere molti produttori; si esplorano territori del vino con l'aiuto di agronomi, enologi e biologi che, partendo dalla storia della terra e attraverso le caratteristiche dell'uva, vi trasmettono tutte le sfumature della degustazione del vino. La Sala Slow Wine è stata allestita come una vera e propria Banca del Vino: un'enorme enoteca dove si possono assaggiare oltre 300 grandi etichette.

Il salone rappresenta anche un osservatorio per interpretare le tendenze di uno dei pochi mercati, quello della ristorazione, che è sopravvisuto indenne alla crisi degli ultimi anni.
